                     BLANCS DE POULET AU FROMAGE

   
                 [Chicken Breasts Covered with Cheese]
 
  Recipe Description:  A chicken breast recipe for fried chicken covered with cheese sauce.
 
  Preparation Time: 15 minutes Cooking Time: 20 minutes
  Ingredients:

4 chicken breasts
2 soup spoons of flour
1 soup spoon of virgin olive oil
3 oz butter
1/2 cup of milk
1/4 c.  grated Parmesan cheese
1/4 c.  Gruyère cheese
1 T. Herbs de Provence
Salt and white pepper to taste
 

Serves: 4 persons









 



 


Preparation:
  • Mix together the salt, pepper and herbs;
  • Roll the chicken breasts in the mixture;
  • Melt 2/3rds of the butter and the olive oil in a frying pan.  Add the breasts and sauté to a golden brown and then remove them;
  • Melt the rest of the butter in an oven-proof casserole, over a low heat.  Add the remaining flour.  Pour in the milk, little by little, stirring evenly with a wooden spoon until the liquid boils.  Cook for an additional 5 minutes;
  • Add the grated cheese, stirring moderately, for an additional 5 minutes;
  • Add the breasts, turning them so as to cover them completely with the sauce.  Place the casserole into a 375 degree oven for 10 to 15 minutes - the surface, of its contents, should be golden brown
